Domestic bliss

What is it about this time of year that makes me feel like I should clean out, organize, and bake?  I haven't done too much of the first two yet, but there's lots of that on my to-do list.  I HAVE been baking though.  Isn't that always fun? 

I started with granola on Saturday--we love granola and it's so much cheaper/better if you make it yourself so you can control what's in it.  I didn't get a picture and it's mostly gone already so I can't share one with you.  Sorry, but if you love granola it's super easy to make and really yummy! 

Last week one of our local stores had fresh blueberries really cheap so I went to get some.  I think I got the last two packages when I was there--I totally wish I could have gotten more!  So, I needed to make something with them and it reminded me of this recipe I have for blueberry muffins.  So, I made them.  IMG_2565 Don't they look yummy?  I got the recipe from an issue of Taste of Home cooking magazine.  Here you go!

4 cups all purpose flour

4 tsp baking powder

1/2 tsp salt

1 cup butter or margarine

2 cups sugar

4 eggs

1 cup milk

2 tsp vanilla extract

2 cups frozen blueberries (I used fresh, so whatever you have will work)

Topping: 2 tbsp sugar, 1/2 tsp nutmeg

Combine dry ingredients in a bowl.  Cream butter and sugar then add eggs, milk and vanilla.  Mix well.  Stir in dry ingredients just until moistened.  Fold in blueberries.  Fill greased or paper lined muffin cups 2/3 full.  Combine nutmeg and sugar and sprinkle over muffins.  Bake 375 20-25 min yield about 2 dozen (I got 2 1/2 dozen out of it)

In December my friend Shanna posted about a pizza rolls recipe she uses for freezer meals here.  Ever since I saw it I have wanted to try it and I finally got around to it last night.  Its amazing to me how just changing the shape of a food makes it seem more interesting/edible to kids (and myself for that matter).  So, I made our pizza rolls and they were a big hit!  Next time I'll be sure I have more cheese on hand because we like straight mozzarella on our pizza and I had to use some cheddar last night because I didn't have enough mozzarella to make the big thing I made.  IMG_2571 Here is it before I rolled it up.  I made three different flavors.  On the left is vegetarian with tomatoes and mushrooms, the middle is pepperoni and the right is Canadian bacon and pineapple.  IMG_2574 This picture is after they were baked.  I wish I had more time for them to rise again before I baked them, but I didn't.  They were all delicious anyway and the kids wanted them for breakfast and lunch today so that's a winner in my book. 

Since I'm on a food kick right now I was wondering if any of you have any great ideas of how to organize your recipes??  I have tons of loose recipes I've gotten from friends or printed off the Internet and they are a big huge mess right now.  I really need to get them organized (it's on my to-do list even), but I'm not even sure where to start.  lol  As usual I'm organizationally challenged.  So, how do YOU do it??

These sound SOOOOOO good, I can't wait to try them all. Especially the pizza, I am a sucker for pizza. Anyway these need to be on the blog I contribute to 'Eat Yout Peas' I may have to copy you, giving you full credit of course:)

I'm glad the pizza rolls turned out good! They are the favorite here too!

For all of my recipes that I copy down or tear from magazines, I just got a normal 3 ring binder, and a bunch of sheet protectors. I have page dividers for 'main dish', 'side dish' 'sweets', etc. Then when I find a recipe I like, I just stick it in. It is really really easy, and it is my best cook book, since I know that all the recipes in it are tried and true!

Wow, can we come to your house for dinner?! :) I guess that'd be pretty difficult since we're in VA. . . For my recipes, I have a small 3 ring binder (I think they're like 9"x7") and the page protectors that fit (usually have to get them at an office supply store like Staples or Office Max). I try recipes & if they are good & I know I'll make it again, I type it up & slip it in the page protectors. I like it 'cause it's more compact than a regular size binder so it fits on my cookbookshelf (it's not very high). Good luck!
