On Friday we stopped at the creamery for ice cream after taking some family pictures. We were all VERY happy that the official BYU ice cream is back!
Sunday, we made BYU mint brownies from the official recipe of BYU dining services as found in the Friday 411 part of the Daily Universe. Thanks to Jason for picking it up for me and knowing that I'd want it!
I didn't even get any pictures before the kids cut up the brownies and started eating. Don't get me wrong...there's still some up there calling my name in the kitchen, but I'm not really good at photographing food anyway so I'll spare you. If you know what BYU mint brownies are then you know what they look like and that they are delicious. Here's the recipe if you want to try it. Now if I could get my hands on their eclair recipe then we'd be set! ;)
BYU Mint Brownies

1 cup margarine
½ cup cocoa
2 Tbsp honey
4 eggs
2 cups sugar
1 ¾ cup flour
½ Tbsp baking powder
½ tsp salt
1 cup chopped walnuts (opt)
12 oz chocolate icing (use your own recipe or store bought)
Melt margarine and mix in cocoa. Allow to cool. Add honey, eggs, sugar, flour, baking powder and salt. Mix well. Add nuts. Pour into greased 9x13 in pan. Bake at 350 degrees for 25 min. Cool
Prepare mint frosting:
5 Tbsp margarine
Dash salt
3 Tbsp milk
1 Tbsp light corn syrup
2 1/3 cup powdered sugar
½ tsp mint extract
1-2 drops green food coloring
Soften margarine; add salt, corn syrup and powdered sugar. Beat until smooth and fluffy. Add mint extract and food coloring. Add milk gradually until the consistency is a little thinner than cake frosting. Spread over brownies. Place brownies in freezer for a short time to stiffen the icing. Remove and frost with chocolate frosting.
My notes: We had to bake ours longer than 25 min which is unusual for our oven. Usually I bake everything less. Also, the brownies were much thicker than the ones from BYU so if you want them more the right thickness try a larger pan (we didn't mind it at all) They are even better the next day so try not to eat them all at once!

Oh man, I love the mint brownies. Having the recipe will be dangerous.
That sounds SOOOO good! We always went to the creamery when we would visit as kids. I loved the bubblegum flavor because it came with a TON of real gumballs. Ah, good stuff.
We will have to give these a try! And thanks for making us want BYU ice cream again....lol
