Call for recipe ideas

I need your help...I need more ideas for breakfast that can be made ahead of time.  Now that school has started I'd like my kids to have more than just cereal for breakfast, but we don't really have time to make something in the morning.  So, what do you do? 

I'm also wanting to find a good coffee cake recipe.  One that has a yummy topping and the cake is moist too.  So, if you have one you love I want to try it!!    I will be sharing a couple recipes that have worked for us in the past soon.  Thanks for your help!

I say go with cereal! But I am actually trying something new. I have an awesome huge recipe for pancakes. I made a bunch and put them in the fridge then would stick them in the toaster for breakfast. They come out a little crispy and awesome. I eat them with just butter. I tried freezing a couple. It worked too but I need to experiment a little more with that to see how long they will last in the freezer.
I'll get the recipe for you.

You could make homemade granola bars (they're pretty easy).

I've made breakfast cookies before (sounds bad, but they're made with healthy ingredients like honey and dried milk and peanut butter and sunflower seeds, etc.) They were actually really good, and could be baked, frozen, and grabbed on the way out the door. I can't find the recipe, but I'll keep looking if you're interested.

Also, green smoothies are really healthy and delicious. You don't make them ahead of time, but they are so quick to make: bananas, milk, and a small handful of spinach in the blender. You could also add any kind of frozen fruit (strawberries, blueberries, etc.) delicious, fast, and so good for you.

Have you made breakfast burritos? I'm not sure if the eggs would freeze well? But you can make a big batch (eggs, sausage, hash browns, salsa, etc. rolled in a tortilla). Make them into the burriots then roll in aluminum foil and stick int he fridge. They'd last at least a week and they are a good grab-and-go meal, or you could pop them in the oven to warm up as you're getting ready for the day.

Thanks for the ideas...Jodie- I'd love that breakfast cookie recipe if you find it. I have one that my kids like, but yours sounds much different and what kid wouldn't love to eat cookies for breakfast. ;) I'll be trying your recipe soon Tawnie. Thanks for the idea Kristi--I'd forgotten about those.

Here's an easy one. You could make it the night before and just warm it up in the morning - or we even like it cold. We've had it for dinner too. I use pre-grated cheese and pre-cooked bacon like for a salad because then it's even easier.

Crustless Quiche
(EASY!)

½ cup melted butter
10-12 eggs, beaten
½ cup flour
1 tsp baking powder
1 4oz. Can chopped green chili peppers (drained)
16 oz. Grated Monterey Jack cheese
16 oz. Small curd cottage cheese
1 ½ cup ham, bacon or shrimp

Mix all ingredients together and pour into a greased 9 x 13 pan. Bake at 350º for 35-45 minutes.

My kids love whole wheat blueberry waffles, I just make a big batch and freeze the leftovers then they toast them and add butter and syrup. Oh and I just use frozen blueberries in the waffles.

We like to make muffins & pop them in the freezer. Microwave them in the morning to heat them up!
